01  Dry-rubbed by hand

Every cut, every morning. Frank’s rubs, no shortcuts.

02  Hours in the smoker

In the restaurant’s own smoker, over real smoke. No shortcuts.

03  Slow-finished until it falls apart

Pulled pork rests in beef broth, then slow-cooks. Twelve hours or more, start to plate.
